A Vitamin Filled Cabbage Soup Recipe

Cabbage soup is filled with some of the best all natural liquid vitamins and minerals, but most people don’t know about it enough to even give it a try. They usually associated cabbage soup with the crazy diet they hear about on TV, but in reality, cabbage soup can be a healthy meal substitute or appetizer. Here is an easy cabbage soup recipe that you can start experimenting with. You just may very well be surprised with the outcome. You never know, it may become a staple meal in your house hold.

Cabbage Soup Recipe
Ingredients:
-    One head of green cabbage
-    1 bok choy
-    1 cup mushroom pieces
-    1 green bell pepper
-    4 carrots
-    4 celery stalks
-    7 bouillon cubes
-    7 cups of water
-    ½ cup vegetable juice, such as V8
-    2 cloves garlic, minced
-    Salt and pepper
-    Fresh thyme

Directions:
Get out a large soup pan and place it on the stove. Next, get out a large cutting board and chop all of the vegetables into one to two inch pieces. Place the vegetables into the pot. Cover the vegetables with the seven cups of water. Add the minced garlic cloves and vegetable juice. Bring the soup to a rolling boil. Let the soup boil for approximately ten minutes before turning down to medium low. Once at medium low, add in the fresh thyme and the salt and pepper to your taste. Let the soup simmer on medium low for one to two hours or until the soup and vegetables are thoroughly cooked. Let soup rest for a few minutes and then divide into bowls.

Serve with a whole grain roll as an appetizer course, or add a protein source such as cooked and cubed chicken or pork to make this soup a main course meal. With this recipe, you have gotten so many nutrients through all of the vegetables that you can afford to splurge on a decadent chocolate dessert! Chocolate also has a lot of antioxidants, so why not!
